Pull JSON fields from text without pretending the values were verified
Unstructured notes hide the same fields over and over: a name, a date, an amount, an email. The structured data extractor sends your key list and the source to Gemini with a JSON response mime type. The model is told to use null when a value is absent. Models still fill gaps with plausible junk. Pretty-printed JSON is not a validated schema and not a database import you should trust blindly.
